During this Butcher Shop Boot Camp Snake River Farms will be delving into a number of different cuts of meat, will talk about where the cuts come from, show you how to properly prepare these cuts, and give a few different recipes, and give you some awesome deals on the featured cuts.
I will update this post a few times throughout the month as they release new entries for their boot camp and there are a few weeks coming up I am really excited about. So let’s get started!

Ribeye Bootcamp
The second entry into the Snake River Farms Butcher Shop Bootcamp is the Ribeye bootcamp. For my money there is no better steak than a nicely cooked ribeye. The flavor and texture can’t be matched by any other steak.
At the Snake River Farms Ribeye Bootcamp they have some great tips on how to properly cook a ribeye. 99% of the time when I cook a ribeye I am going with the reverse sear and Snake River has a good guide on how to do it. They do theirs in the oven and on the stove but I just use my grill for it.
The Snake River Farms ribeyes are some of the best steaks I have ever eaten and during this event (8/5-8/11) their ribeyes are up to 35% off. I recently cooked their Prime Cowboy Steak (on sale for $58) for my 4 way ribeye taste test and they came in a very, very, very close second. But if I ran the same test again I wouldn’t be surprised if the SRF steak won.

Brisket Boot Camp
First up for the Butcher Shop Boot Camp is the wonderful brisket. Snake River Farms might be best known for their briskets as they are widely used by many of the top bbq competition teams across the country. I have cooked a few of these and there is a definite difference between these and the USDA Prime briskets I have had from Costco.
As you are trimming these briskets you will be able to tell the difference in the quality of the fat. It will almost melt in your hands. Definitely save the trimmed fat and render it down to make your own tallow.
