Cooking meat is surprisingly simple. Ultimately all you need is heat and a piece of meat. There are a few simple tools that will make your life a bit easier though and here are the 3 items that everyone who wants to cook a proper piece of meat will need:
1. Cast Iron Skillet – These can be used on the stovetop, in the oven, on the grill, and even on a campfire. It is the most versatile pan you will ever have, it is virtually indestructible, and with proper care it will last for many generations. The more you use it the better it gets too. You can sear a steak in it, cook a roast, fry up some bacon… pretty much everything.
2. Probe Thermometer – A good probe thermometer helps prevent nearly all overcooking or undercooking. When you know the internal temperature of your meat you know if it is done or not. A good probe thermometer also allows you to cook your meat without constantly checking the temperature, opening the oven, lifting the lid on the grill and slowing the cooking process. The ThermoWorks Dot is my thermometer of choice right now. It is reasonably priced, accurate, and simple to use.
3. Spring Loaded Tongs – Forget meat forks and get yourself a good pair of tongs. They are great for flipping steaks, turning bacon, moving a roast to the cutting board, and they even help with carving. For under $10 you can get yourself a pretty nice pair.
